Best Prix Fixe or tasting menu in vegas?

Me and the boyfriend are heading to Las Vegas next month and i really wanna try the whole prix fixe or tasting menu deal. We dont go out to eat much (especially to fancy places) so i want to make this a really memorable experience. I am willing to pay up to around 300.00 for the two of us (hopefully with a bottle of wine included in there)

Anyone have a good place to recommend? Id be really neat to get food that has a unique presentation and really feels like a first class experience.

Here are a few of the resturants that I have tried and would recommend them to other people! I have also tried to help by including the menus along so you can choose which one you and your boyfriend would mostly like trying!! Have a wonderful time in vegas!!

Foie Gras Terrine on crispy bread with Quince & pomegranate, Baby beet salad with prosciutto and lemon Vincotto, Spicy crab mille fogile with bottarga flavored creme fraiche, Sweet potato Tortellini with Wagyu short rib ragout, Buffalo filet with panella (chick a pea cakes) and coffee demiglaze, assorted cheeses with chutneys, Grappe Marinated fig cake with almond and Licorice Ice cream

***also can add the wine pairing tasting menu for $79 per person.

A Taste of our Menu (2 people minimum):
veggie terrine, Smoked quail, Scallop Saltimbocca, Gnocchi, Bucatini, Pennoni Salmon,, tuna, fluke veal shank, kurobuta pork, beef tagliata, dessert sampler.
$95 per person (you have the option of adding the wine pairing wines to your meal for $50 per person)

James Beard Tasting menu:
Lychee with maine lobster, pei far tofu, shanghai pork dumplings. Chilled abablone. Choice of whole shark fins soup or ash melon with rock shrimp. Pan seared chilean sea bass, Roasted Duck. Warm Banana Coconut Crepes
