what is the rule of thumb for pricing food at our concession stand? 50% mark-up?
we have a small concession stand at our ball field. While we do "OK" money-wise, I'm not sure we have it priced where it should be. Someone else in in charge of the pricing. I think some things are too high and I think others should be higher. The caterer I used to work for said that the rule of thumb for picing meals in catering is 1/3 food costs, 1/3 labor and1/3 profit. Using that "rule" should our price be 50% above of the food cost since we have no labor costs? We don't want to gouge the parents that support us, but we want to make money.
There is not a rule of thumb -- only what the market is willing to pay at your location for your product or service. Check other concession stand prices and compare them to yours.
Also I've owned multiple restaurants and the bottom line is "how much do I need to make per hour to be happy" and my hourly amount is a minimum of $25 per hour.
So I deduct my expenses from my revenues and divide my net profit by the number of hours I regularly spend working the business and if it's lower than my minimum - which may be higher or lower for you - that will tell you if you need to raise/lower your revenue (sale prices).
The end result must be that you're happy at what you do and you enjoy doing it.
