Why do chefs where the long tall chefs hat?
So you know when you walk into a fancy public restaurant, there is usually one or 2 cooks with a long tube-like white hat on their heads. Is there a reason for it? Do they throw food into it? Is it good for cooking. Or is it just for fashion? Thanks, Reyz.

The chef's hat is called a "toque blanche," which is French for "white hat" and is usually shortened to just "toque." Its history goes back at least to the 16th century, and different heights of toques were meant to indicate the wearer's rank within the kitchen. The head chef wears the tallest one, while lower ranking chefs and cooks wear shorter ones. The commis chefs (apprentice cooks) might wear little more than a small, short cap.
One explanation suggests that they originated in the old kitchens of castles and restaurants in Europe where there were no modern ventilation systems. There were thick accumulations of grease on the ceilings, so the toque was developed over time as a way to protect cooks' heads from falling grease. Other explanations have also been suggested. Modern use of the toque is probably just due to fashion and tradition. (Of course, having a hat on a cook will help to prevent hair from getting into the food, which is certainly a good thing!)
