i would like to know why the freezing point of stearic acid is quite high, and why the temperature stays the same as the acid freezes.

Stearic acid is a high-carbon acid, with 18 carbon atoms per molecule.
Its high molecular weight gives it a relatively high freezing point 70.1°C
As it freezes, or changes from the liquid to the solid state, even though
they are being cooled, the molecules lose heat as they turn to solid;
this heat is called "heat of fusion". This tends to keep the temperature
the same even though the acid is being cooled so it will freeze. As
soon as all the acid has changed to the solid phase, the temperature
will drop some more. This fact holds true for all liquids as they freeze.
