Quality of pre-seasoned "ready-to-cook" roasts versus NOT pre-seasoned roast packages...?
It seems that with pre-seasoned roast packages (not cooked yet), the quality of the meat after its cooked, seems obvious to me. It seems more fatty, more gristle, sinewy, tougher. This type also seems to have a LATER expiration date, which leads me to believe there are preservatives added in the mix...?
If I purchase a similar package, but it is unseasoned, therefore you can see the meat clearly, fat is displayed, color and such that...
All things being equal (size, animal type, packager, cooked the same method for same amount of time)...there is a marked difference in quality and taste / texture of meat. (The pre-seasoned seem more "commercialized deli" with additives, preservatives).
I'm thinking to just no longer purchase the pre-seasoned meats and to just season them myself, so that I don't wind up with a "questionable" meat choice.
What do you think? Have you noticed similar differences?

You always pay extra for convenience and I've only occasionally fallen victim to it. Things are always better made from scratch.
I'll give you a gigantic hint for recreating the flavors you are trying to identify and copy when creating your own. Onion Powder. It's a giant flavor component in processed meats. Garlic comes in next and seasoned salt is another one to try.
