Should water be placed in an electric steam table's well, or in a deep pan set into the well?
I recently purchased an old, used electric steam table. Of course, no instruction manual came with it and I am uncertain whether water should be placed directly into the wells, or if there should be a pan of water placed in them, and then the other pans into that. I've tried putting the water directly into the wells, and it seems to keep the food too warm, even when I turn the temp down (temp dial is 1-5, not in degrees), and causing sauces and such to scorch. I'm afraid that running an experiment without water to compare might cause it to run too hot and burn up an element. I know this all probably sounds silly, but until now I've only used gas tables so am in very unfamiliar territory. How does everyone else set up their electric tables??

You're doing it right. The only thing that comes to mind is changing out the "temp dial." A temp dial is just like a volume control. They are rated for voltage, resistance, and current so make sure you get the right one.
Resistance is measured in Ohms. The rheostat (temp dial) should have a range greater then the current one. If you have a multi-meter set the temp dial to 1 and measure the resistance across the dial. You'll want to maybe double that number but no more. At 0 Ohms it is a direct circuit and it will be as hot as it can get. At say 10,000 Ohms it may just be luck warm.
