How to make a multiple layer cake?
My husband's aunt makes cakes that have 10 to 16 layers. How does she do it? 10 different cake pans or just slice a few cakes? How does she get the icing so perfectly layered pretty??
she is 83 years old and makes the yummiest cakes... I do 2 layers and have frosting falling all over the place.
can anyone teach me?
You could make ten different cakes, but I would suggest making five, and then cutting each in half long ways. I would then cut off the rounded top part so that it is flat on both top and bottom (it's easier to frost and looks better). If you want, you could also trim the sides a bit, so that each cake is slightly smaller than the last. (like a tiered wedding cake)
When you frost, start with the bottom layer. Frost the top and then the sides, being careful not to let any cake crums get mixed in with the frosting. When you're done, smoothe out the frosting or swirl it a bit for decoration.
If you want really thin layers, cut one or two cakes about an inch or 3/4 inch thick.
Instead of putting frosting in between layers, you can also use pudding or mousse.
To make flowers, put some colored frosting in a plastic bag and cut a SMALL hole in ONE of the corners. Since you seem to not be that experienced, I would suggest making five dots in the shape of a flower or some other simple design. You could also decorate the edges with dashes of frosting all the way around. If you get really into decorating this way, go to a cooking store and buy a professional frosting bag with different tips to make really cool decorations.
If you don't want to do the whole frosting squeezing thing, put some sliced almonds on the side(s) of your cake. This can be useful if you've got a lot of cake crumbs mixed in with your frosting that you want to hide.
Another thing professional cake makers do is to take a fork and drag it around the side of the cake to make those cool looking line things.
Put small slices of fruit or berries around the edge of your cake with dashes of frosting between each slice/berry.
If you don't feel like frosting a cake or don't have any frosting, spread some jelly or jam in between two vanilla cakes and coat the top generously with powdered sugar. This cake was one of Queen Victoria's favorites.
There are a million ways to make and decorate cakes: I would suggest going online or looking in a cooking magazine if this wasn't helpful.
