Will food stick less to a stainless steel pan with a higher polish?
I just got a set of stainless steel cookware. I'm thinking about mirror polishing the bottoms of the sauce pans in an effort to keep food from sticking to them quite so much. Has anyone cooked on a mirror polished (or very high polished) stainless steel? I don't want to waste the time and effort if it doesn't result in a better quality pan. Thanks.
If they are decent quality stainless, I would not mess with them. Keep in mind that the best part of cooking on stainless steel is that food DOES STICK. You want your meats to brown and leave that fond on the bottom of the pan that is so essential to sauce making. This is why it is always better to cook meats in stainless steel or cast iron rather than a non-stick.
When you cook meats, use some fat (olive oil, vegetable oil, butter, lard...etc). Let the meat cook until it naturallly releases. This happens when the bottom browns well. Don't turn meat until this natural release happens. Turning early will cause the meat to rip and juices to run and will ultimately result in a dryer piece of meat.
