We are having a semi-casual wedding and would like to have a taco bar dinner?
Here is my list of items to have on the buffet:
Ground Beef and shredded chicken
hard and softshell tacos (maybe tostada shells)
Lettuce
Tomato
Shredded Cheese
Black Olives
Onions
Salsa
Sour Cream
Rice
Beans
Side salad and dressings
Am I missing anything? Should anything else be included? (Guacamole is going to be too expensive I think)

I don't know where you live but by me, it costs about $1.00/Avocado so unfortunately, it is quite expensive to make guac for 250 guests.
I love the sound of this, but people who like tacos like them a certain way, so you'll need hot sauce and I don't think that making guacamole is that expensive. Can everyone eat red meat? Chicken and fish tacos are good too. Either way I like mine simple so what you have sounds delicious to me.
