what do i use to get old baked on food and grease off of a restaurant oven?

I’d use a good strong industrial strength oven cleaner / degreaser. Use plenty of that and some very hot water to help clean off all the grease and food. I’d also recommend wearing a good quality pair of rubber gloves, preferably with a long cuff length, and if you are spraying the cleaner chemical, make sure you protect your eyes with goggles or glasses and don’t breathe in the fumes either.
